I have been trying out different recipes to add to my meal prep rotation! I have been looking to add meals that are more than just protein + veggies. Although I love a good meal of grilled chicken and roasted veggies, I sometimes crave something that is more filling. That’s where this recipe comes in!
This pasta dish is not only delicious but will satisfy that lunch or dinner time hunger!
cheesy ranch chicken pasta
Ingredients
24oz chicken breast, cut into 1/2in cubes
2 stalks of broccoli, chopped
1 box Barilla protein pasta (I like the thin spaghetti but penne works great too)
12oz Velveeta 2%, cut into 1in cubes
1C milk (I use Fairlife whole milk)
1 packet Hidden Valley Ranch seasoning
1-2tbsp olive oil
Directions
Steam your broccoli and set it aside.
Cook the pasta according to the directions on the box.
While you are boiling your water and cooking the pasta, heat 1-2tbsp of olive oil over med-high heat. Sprinkle 1/2 of the ranch packet over the chicken pieces and toss to coat.
Add the chicken to the pan and cook until it is cooked through. Set it aside and wipe out your pan.
Turn the heat to med-low. Add the Velveeta cubes, milk, and the remainder of the ranch seasoning and stir frequently until the cheese is melted and the mix is smooth.
Add the chicken and broccoli back into the cheese sauce. Drain the pasta and add back to the pot. Pour the cheese, chicken, and broccoli over the pasta and toss until it’s all coated.
Portion into 6 containers.
To reheat: Add 1-2tbsp of milk. Cook in the microwave on 60% power for 2 mins. Stir. Cook on 60% power for an additional 1:30. Enjoy!
